The aromatic rice noodle salad is a real all-rounder in the summer - it's perfect for lunch in the office, for dinner, for a picnic in the meadow or for a brunch. And with the right little kitchen helper, he is done neatly.
Since you rarely get chicken meat at the butcher, I make the hack for my balls in just one minute myself. The good news: In order to produce great minced meat at home, you do not need huge food processors. The recipe for summer rice noodle salad with Asia pesto and poultry chop Balls
Poultry meatballs
250 g turkey meat
½ small red onion, roughly divided
1 clove of garlic, roughly divided
2 cm fresh ginger, roughly chopped
2 teaspoons fish sauce
½ teaspoon grated lime peel
½ red spicy hot peppers, roughly divided
1 sprig of coriander, roughly chopped
2-3 tbsp sesame seeds
1 tbsp sesame oil 1/2 Tsp salt
150 g wide rice noodles
1 small red pepper, diced
1/3 snake cucumber, diced t
3 green onions, white & green in rings
½ red onion in slices
Asia pesto
1 large bunch of fresh cilantro, roughly chopped
1 sprig of mint, roughly chopped
½ red onion, roughly divided
2 spring onions, roughly divided green & white
1 clove of garlic
1/3 spear Lemongrass, chopped
2 tablespoon salted peanuts
3 tbsp olive oil
2 lime juice
2 tsp fish sauce
Put the turkey minced meat with onions, garlic, ginger, fish sauce, lime zest and hot peppers in the blender jar of the hand blender. Place the top of the hand blender and mix for about 30 seconds to a homogeneous minced meat. (Alternatively use minced meat in a food processor to make minced meat.)
From the mince with slightly moistened hands, make approx. 14 walnut-sized dumplings. Place the sesame seeds on a plate, dipping the dumplings in it and rolling them again with your hands.
Heat the sesame oil in a non-stick pan and fry the puff pastry dumplings over medium heat (about 15 minutes) .
In the meantime, cook the rice noodles in boiling water for about 3 minutes (or according to the packing instructions). Drain, chill under running cold water and drain well.
For the Asia pesto, add cilantro with mint, onion, spring onion, garlic, lemongrass, peanuts, olive oil, lime juice and fresh sauce to the blender jar. Mix with the blender to a creamy pesto.
Mix the rice noodles with half of the Asia pesto and fold in the paprika, cucumber, spring onions and onion. Put the rice noodle salad on a nice plate and place the poultry chopping balls on it. Spread the remaining pesto in blobs.
Sprinkle with chopped green onions and a little cilantro.
